Nanjing cuisine, also known as Jingsu cuisine, Jingsu dainty cuisine, is one of the four representative dishes of Jiangsu cuisine. Nanjing cuisine has a long history and a wide variety of dishes. It highlights seven flavors and seven tastes, namely “fresh, soft, crisp, tender, crunchy, thick, fat” and “sour, sweet, bitter, spicy, salty, fragrant, stinky”. Nanjing cuisine is famous for its traditional dishes, and duck dishes, halal dishes and seasonal wild vegetables are also renowned. Nanjing cuisine focuses on the original flavour and taste, which is acceptable to most people due to its moderate flavour. It stresses sweet and fresh, bitter and nourishing, spicy but not strong, stinky but indeed fragrant. Therefore, it shows characteristics of all other cuisines around China.
